What we're known for
The oysters come off the fire hissing.
Oysters go straight onto high, direct heat until the butter bubbles up over the shell and the edges blacken.
Garlic butter, parmesan, a squeeze of lemon, grilled bread to catch what's left in the shell. Gulf Coast tradition, cooked in the middle of Indiana.

House-smoked meats
Brisket, pork and wings go into our smoker before the doors open. Long, slow, no shortcuts.

Hand-made pizza dough
Mixed, proofed and stretched by hand in-house. Blistered edges, a real chew.

Multi-generation recipes
Family recipes that predate the building — sauces, rubs and sides handed down and still cooked the long way.
Produce, meat and dairy are sourced from Indiana growers and producers wherever the season allows.

About
A neighborhood place, first and always.
Fork + Ale House opened in 2019 in Midtown Carmel with a small brewhouse and a short menu. The beer came first; the kitchen caught up fast.
Over the years the kitchen grew around char-grilled oysters and scratch cooking, while everything that made the place work stayed put — kids at the big tables, regulars at the bar, trail riders on the patio, nobody dressed up.
We're not upscale and we're not a chain. We're the spot down the street that happens to smoke its own brisket and grill oysters like the Gulf Coast.
